Kerala Style Vattum Karallum Fry

Ingredients

  • 1-2lbs  mix of Chicken Liver, Gizzard, Hearts and Neck

  • 1 Onion, finely chopped

  • 5-6tbsp Ginger Garlic, finely chopped or paste

  • Curry Leaves

  • 4tbsp Coriander Powder

  • 1tbsp Chilli Powder

  • 1tsp Turmeric Powder

  • 1tbsp Garam Masala

  • Black Pepper Powder

  • Salt

  • Oil

Directions

  • Heat some Oil in a pan and saute Onion and Curry Leaves.
  • Saute until Onion turns light golden brown in color.
  • Add Ginger and Garlic.
  • Saute until raw smell is gone or saute in a medium flame for about 2mins.
  • Add Coriander, Chilli and Turmeric Powder.
  • Saute until raw smell is gone.
  • Carefully add washed Chicken Liver, Gizzard, Heart and Neck peices.
  • Add Salt and mix everything together.
  • Cover pan with a tight lid and allow Chicken peices to cook.
  • Don’t forget to stir ocasionally.
  • In few mins you could see Water coming out of Chicken pieces.
  • Cover and cook until all Chicken pieces are fully cooked.
  • Remove the lid and allow all the liquid to evaporate.
  • Add Pepper Powder and Garam Masala.
  • Mix everything well.
  • Serve Kerala Style Vattum Karallum Fry hot with Rice or Roti or Bread.

Notes

  • Make sure to wash Chicken Heart, Gizzard, Liver and Neck pieces well. You can always add Tomato, if you like.
